There aren’t enough whole chicken recipes anymore as American society (those who cook anyway) began to cook with chicken breasts only.
This whole chicken recipe is a nice, easy introduction that’ll take some of the unknowns out of cooking great meals from scratch. As I took this page out of a cookbook long ago, I don’t have an original author to credit it to.
1 Broiler-Fryer Chicken, quartered (about 3 pounds)
1/3 Cup Honey
2 Tablespoons Lime Juice
2 Tablespoons Soy Sauce
Preheat oven to 375 degrees F. Arrange chicken, skin side up, in a single layer in a shallow casserole dish or 11 x7 inch backing dish.
Combine remaining ingredients and blend well. Brush 1/3 of honey mixture over chicken and back 15 minutes.
Brush remaining honey mixture over chicken; bake 10 to 15 minutes more or until juices run clear. Serve with your favorite vegetable dish.
