I try to like vegetables. Therefore, I try different recipes to see if it’ll make them tastier. I got a version of this off Foodily.com by The No Meat Athlete years ago and it isn’t too bad.
As always, modify all recipes to fit your likes. I do.
2 Tablespoons Butter
2/3 cup Quinoa
1 Carrot, diced
1 yellow onion, finely chopped
1 small head cauliflower, chopped
1 Green Bell Pepper, seeded and chopped
2 Cloves Garlic, crushed
2 Cups of your favorite stock or broth
1 pint of diced tomatoes
2 Cups Cabbage, sliced
1 Teaspoon Basil
2 Bay Leaves
1/2 Teaspoon Italian Seasoning
2 Cups Baby Spinach
Salt and Pepper to taste
Saute quinoa, carrot, onion, cauliflower, bell pepper and garlic in butter over medium heat until lightly browned, stirring frequently.
Add broth or stock, tomatoes, cabbage, herbs, salt and pepper. Add water as needed. Simmer until quinoa and vegetables are tender, about 10 minutes.
Add spinach and let wilt into dish before serving.
